Watercress Fritters (Mofo Anana) – Madagascar Street Food

Makes about 12 medium fritters


Ingredients:


  • 1 ½ cups flour
     
  • 2–4 cups watercress, cut up
     
  • 1 tomato, diced
     
  • 1 onion, diced
     
  • 2 green onions, sliced (use all parts)
     
  • 2 eggs, beaten
     
  • 1 cup water
     
  • 1 tsp curry powder
     
  • ¾ tsp salt
     
  • 1 tsp baking powder
     
  • Oil for frying (about 3 tbsp per batch or use a deep fryer)
     
  • Optional: finely chopped chili
     

Instructions:


  1. In a bowl, combine all ingredients to make a thick, smooth batter.
     
  2. Heat oil in a skillet over medium-high heat.
     
  3. Drop spoonfuls of batter into the hot oil.
     
  4. Fry until golden brown on one side, then turn and cook the other side until golden.
     
  5. Remove fritters and drain on paper towels.
     
  6. Serve hot with your favorite condiments.

Easy Garlic Bok Choy

 

Ingredients


  • 1 tablespoon Olive Oil
  • 1 teaspoon Chili Oil
  • 4 cloves Garlic, finely chopped
  • 17 oz. / 500 gm. Bok Choy
  • 2 tablespoons Soy Sauce, or use Tamari Sauce for a Gluten-Free option
  • Toasted Sesame Seeds, to top


Instructions


  1. Heat Pan: Set a large pan over medium heat.
  2. Prepare Oils: Add 1 tablespoon olive oil and 1 teaspoon chili oil to the pan. Once hot, add 4 cloves of finely chopped garlic and stir-saute for 1-2 minutes, or until they’re nicely brown.
  3. Cook Bok Choy: Add 17 oz. bok choy and stir-saute for 2-3 minutes or until the leaves wilt.
  4. Add Sauce: Pour in 2 tablespoons soy sauce (or tamari). Mix well and cook for 1-2 minutes.
  5. Final Touch: Delicious garlic bok choy is now ready. Sprinkle with toasted sesame seeds, then serve as is, over rice, or with your favorite meal.


Recipe Notes


  • For added spice, increase the amount of chili oil or add red chili flakes.
  • If you prefer a smoky flavor, char the bok choy slightly before adding soy sauce.
  • Gluten-free soy sauce or tamari can be used as a substitute for regular soy sauce.
  • Olive oil can be replaced with sesame oil for a nuttier flavor.
  • Avoid overcooking bok choy to maintain its crisp texture.
  • Add a dash of lime juice or rice vinegar for a tangy twist.
  • Sprinkle with crushed peanuts or cashews for added crunch and flavor.
  • Adjust soy sauce quantity based on the saltiness of the brand you use.
  • Serve immediately to enjoy the best texture and flavor.
  • Store leftovers in an airtight container for up to a day but expect reduced crispness.
